Golden Hour Sour

I wrote this drink on a Friday night during service. Served it as Drink Of The Day on Saturday 6/28. Had some mangos that needed to be used. Decided to try my hand at cheong. Cut up 2 red mangos, 1 golden mango, and one small lime, then added them to a kitchen container. Put their weight in sugar on top and left them in the fridge overnight. Made a tester with Monin mango that the kitchen uses for one of their sauces. In the morning (530pm) I strained the syrup into a bottle through a fine mesh sieve. I did add a little bit of the Monin to supplement just to ensure I would make it through service, but I could have held off on that. I used ¾ of it and will use the rest Tuesday. This drink was super enjoyable. I could have 2. If you know me you know that is saying a lot.

Ingredients:

  • 1.5oz Tanqueray Rangpur Lime Gin
  • 0.5oz Italicus Bergamot Liqueur
  • 3/4oz lime juice
  • 1oz Mango Lime Cheong
  • small egg white
  • orange twist

Add all wet ingredients to the small side of the tin, excluding the egg white in the big side. Add ice and hard shake. Double strain contents into the small side of the tin. Dry shake. Strain into a rocks glass over a large rock. Garnish with orange twist in shape of your liking.
