Tortilla Egg V1

Man do I love a tortilla as a vessel for an egg. So versatile, so easy. This is the one I’ve been having on repeat this week. V1 (version one) since it is the first of my tortilla eggs I have posted. Look out for others as I love to make different variations of this for breakfast or a snack!

Ingredients:

  • tortilla
  • pesto
  • marinara sauce
  • feta cheese with sundried tomato and herbs
  • olive oil
  • 2 eggs
  • fried onions
  • red pepper flakes
  • flaky salt
  • black pepper
  • balsamic reduction
  • chili oil

This is super easy to throw together. First take your tortilla (shown on right) and spread pesto on it, followed by a bit of marinara sauce, and finally the feta. Microwave for 30 seconds just to bring up the temperature of the toppings. You can also air fry it if you want your tortilla to be a little crispier! I personally like it soft most of the time.

After your tortilla is ready, put a little bit of olive oil in your saucepan on medium-high heat, and let the oil heat up. Once the pan is hot, crack 2 eggs into it. Immediately after dropping the eggs in, add on your fried onions and red pepper flakes. Cover for a couple minutes; just long enough to make sure the egg white is cooked through but the yolk is still runny. Slide the eggs off the pan directly onto your tortilla. Pop those egg yolks and spread them around, top with chili oil, balsamic reduction, fresh cracked pepper, and flaky salt! So yum.
